This week we will introduce one of our waitresses Mikaela.
Born 7th June 1994 | Waitress | 5 months at The Depot
After spending most of last year backpacking through South East Asia, Mikaela’s feet are now firmly placed in The Depot. Mikaela says being involved with The Depot feels like being part of a family and she loves the welcoming atmosphere amongst the staff. Mikaela is studying languages at university and hopes to one day be a translator. Although she was born and bred in Newcastle, Mikaela can’t wait to travel more and says she would love to explore the history and culture of Japan and Iran next.
This week we will introduce one of our floor managers Laurence.
Born 14th March 1982 | Manager | 6.5 years at The Depot
After helping build The Depot with his own hands, Laurence has been part of the family since the very beginning. Starting off as a barman, Laurence has become a Jack of all Trades. You’ll often find him behind the coffee machine, shaking cocktails or chatting with our regulars. After being part of the team for so long, Laurence is passionate about The Depot and he’ll always work hard to make sure the business succeeds.
This week we will introduce one of our floor staff Hannah Boss
Born 14 April 1993 | Restaurant Supervisor | 4 years at The Depot
Hannah is one of the many uni students who are part of The Depot team. Since finishing her degree in Speech Pathology she decided that she loved it here so much, she was in no rush to leave! After travelling the world Hannah grew to love Spanish food, and loves that our tapas menu here at The Depot reminds her of her time spent overseas. As our restaurant supervisor Hannah loves interacting with our loyal customers and the team driven atmosphere here at The Depot.
This week we will introduce one of our Chefs Justin Petrovski
Born 23 October 1995 | Chef | 1 year at The Depot
Justin is our rising star at The Depot. After joining the team 15 months ago, he has grown to be a very passionate chef. Justin loves working at The Depot and says his favourite part about the job is the team driven environment, “everyone is always energetic and doing a great job” he says.
In his spare time Justin likes gardening and getting his hands dirty.
He loves the ‘garden to plate’ philosophy, and having access to a wide range of fresh ingredients here are The Depot is what really inspires him to cook.
Justin’s career goal is to work alongside the best chefs in the world, and hopes to one day open a hatted restaurant of his own.
Born 25th July 1990 | Manager | 6 years at The Depot
Milly is the heart and soul of The team at our Beaumont St restaurant and has always been very passionate about who we are and what we do. Milly started working with us when she was 19, with no former experience, her entire training has been through The Depot. Milly has worked her way to the top, now managing The Depot on Beaumont as well as admin. Milly’s career goal is to eventually be able to go anywhere in the world, pick a restaurant she loves and walk in and manage it. Milly’s dream is to one day open up a Depot Restaurant in Melbourne with Chad and the team.

This week we will introduce one of our Chefs Jake Hayes
Born 11th May 1995 | Chef | 3 years at The Depot
Jake started in the hospitality industry when he was just 16. He’s always been passionate about food and has been part of The Depot team since 2011. Jake has a passion to learn all he can in the kitchen. His favourite part about working at The Depot is working along side our Head Chef, “Dylan gives me so much knowledge, I’m always learning every day” he says.
Jake’s favourite dish to cook is fish, “either you get it right or wrong – and I always make sure I get it right” he says. Jakes goal is to one day be the head chef of The Depot.
